Bucán Rodeo, the food trailer that turned Puerto Rican-Texas barbecue fusion into one of San Antonio's most sought-after sellouts, is packing up its smoker and heading to a new home where kids and non-drinkers can finally get a seat at the table. After more than a year parked behind Three Star Bar in Government Hill, the trailer will serve its last plates there on September 20 before reopening at the Broadway News food truck park on October 2.
The move solves a problem that's dogged the concept almost since it went viral: Three Star Bar restricts service to guests 21 and older, according to MySA. Co-founder and chef Michael Barrera-Pacheco said the age restriction limited who Bucán Rodeo could serve, and that the shift to Broadway News will finally make the trailer available to families. He told the outlet the team is happy and excited to serve more people, add breakfast items, and prepare more food at the new site.
A Cramped Kitchen Gets Room to Grow
Space, not just clientele, has been part of the calculus. Barrera-Pacheco and co-founder Roy “RJ” Baker built Bucán Rodeo out of a shared passion project, merging Barrera-Pacheco's Bomba pop-up with Baker's Bitchn' Rodeo and A Good Fucking Burger concepts after they partnered in summer 2024, according to the San Antonio Current. Barrera-Pacheco created the concept to fill what he saw as a gap in Puerto Rican culinary representation in the city, drawing on recipes from his own Puerto Rican upbringing to fuse Boricua flavors with Texas smoked meats, the paper reports.
That fusion menu has expanded to include pernil, mofongo, guava barbecue sauce, and tostones, according to KSAT. The added prep room at Broadway News is expected to let Bucán Rodeo launch breakfast service while working toward an eventual brick-and-mortar location.
How a Viral Video Filled the Order Line
Demand for Bucán Rodeo didn't build gradually. The trailer saw a surge in customers and started selling out regularly after an influencer video helped push the concept into the local spotlight. That kind of viral attention has made the frequent sellouts as much a part of Bucán Rodeo's identity as the menu itself.
The trailer's Government Hill home at Three Star Bar had given the concept a dedicated following even with its 21-and-over rule. Now that base of regulars will need to follow the trailer to Broadway News.
A Proven Launchpad Backed by River Walk Royalty
Broadway News has a track record of nurturing small food concepts into bigger businesses. The park previously hosted Carnitas Don Raúl, whose Mexican original was featured on Netflix, according to the San Antonio Express-News. Bucán Rodeo will join current Broadway News tenants Mila Coffee, Fratello's To-Go, and Aroy Ver Thai Bite, per MySA's reporting.
The property itself carries some River Walk pedigree. Broadway News is owned by Los Leones, the family ownership group behind historic institutions Casa Rio and Schilo's, as Hoodline previously reported in connection with the family's approved rooftop bar projects elsewhere downtown. Under that ownership, Broadway News has also added a climate-controlled indoor option: plans announced in July 2025 called for converting former retail space into Hey Hey Social, an air-conditioned lounge offering indoor seating for the park's food trailer customers, according to CultureMap San Antonio.
Staying Local Even as the Brand Grows
Even as Bucán Rodeo expands its footprint, the co-owners have signaled they're not looking to go far. In April 2026, when Texas rolled out new statewide mobile food vendor licensing regulations, Barrera-Pacheco and Baker voiced support for the rules while confirming they intend to keep their trailer operations strictly local to San Antonio, according to the San Antonio Express-News. The pair has also stayed visible in the city's hospitality community beyond their own kitchen.
For now, the countdown is on. Bucán Rodeo has less than a week left at its Government Hill spot before the September 20 closeout, followed by a nearly two-week gap ahead of its October 2 debut at Broadway News. Whether the smokehouse operation can scale fast enough to satisfy new daytime family crowds without losing the sellout mystique that made it famous remains the open question hanging over the move.
