New Jersey's first all-you-can-eat Wagyu restaurant was expected to open Friday, Oct. 23, in Edison, giving Central Jersey diners a spot to cook Japanese, Australian and American Wagyu right at their tables before raiding a buffet loaded with sushi and dumplings. Wagyu Factory planned to open at 1763 Route 27, marking the chain's debut in the state. Its official Edison page still listed the restaurant as “Coming Soon” on Oct. 23.
The Edison location is Wagyu Factory's seventh restaurant overall, following outposts in California, Washington, Texas and Florida, according to Patch. The concept pairs tableside grilling with a self-serve buffet, letting guests sear their own cuts of marbled beef and then wander over for seafood, sushi rolls, nigiri, steamed dumplings, fried items and desserts, per the same outlet.
Grill-Your-Own Wagyu Meets a Sprawling Buffet
Wagyu Factory's own description of the restaurant leans into the premium angle, calling it a bid at bringing a premium all-you-can-eat Wagyu BBQ experience to Edison, New Jersey, according to Wagyu Factory. The company says guests can enjoy unlimited selections of beautifully marbled Wagyu alongside a variety of other fresh, high-quality meats, all ready to grill right at the table, the restaurant notes on its website.
Beyond the grill, Wagyu Factory points to an extensive self-serve buffet featuring fresh seafood, hot dishes, vegetables, sauces, desserts, and more. That buffet-and-grill combination is the core pitch for a chain trying to make a luxury ingredient feel like an everyday night out rather than a splurge reserved for special occasions.
Behind the Edison Opening
Wagyu Factory is run by Chubby Group, the same company behind dining concepts including The X Pot, Chubby Cattle, Niku X and Mikiya, the Patch report notes. Chubby Group co-founder David Zhao said the company was especially excited to bring this concept to New Jersey for the first time with the Edison opening.
Wagyu Factory's planned Edison location would bring an all-you-can-eat option with a premium Wagyu twist to Route 27.
