A coastal Italian-style sandwich shop called Mariner's Market is aiming to open in downtown Holland before Thanksgiving, taking over the storefront at 82 W. 8th St. that sat empty after a longtime bakery tenant moved out earlier this year. Founder Anna Maier describes the concept as a takeout-friendly spot combining quick service with fresh, local ingredients and sandwiches built to look good on social media.
Maier, a Hope College graduate, says the building's owner reached out to her in the spring about creating a sandwich shop in the space, according to WOODTV.com. The address became available after Cakabakery shifted its business model toward wholesale dessert distribution across West Michigan and closed its retail storefront there in May, according to WZZM 13, while keeping a secondary location open on Lakewood Boulevard in Holland.
A Third Business Built on Catering and Beachside Sandwiches
Mariner's Market marks Maier's third venture. She launched her first business, Great Lakes Charcuterie Company, in 2021, catering artisan boards and grazing tables for clients including Hope College, MillerKnoll, and Holland Hospital, per The Hollander. She followed that in mid-2025 with Boxed Up Kitchen, a seasonal dockside sandwich window in a storefront next to Anchor Party Store on Ottawa Beach Road, designed for beachgoers and boaters heading toward Holland State Park, the same outlet reports.
Maier says Mariner's Market will combine her charcuterie and sandwich experience into a different, higher-end, quirky concept, per WOODTV.com. She was inspired by social media photos of focaccia sandwiches, and that bread will serve as the menu's centerpiece, supplemented by baguette and ciabatta options. The shop will source its bread from Nantucket Baking Company, a Grand Rapids bakery founded 25 years ago in the Heritage Hill neighborhood that expanded with a second location on Fuller Avenue in 2021.
Fig Jam, Calabrian Chilis, and a Classic Italian Favorite
The menu will include gluten-free and vegan dishes alongside sandwiches built with ingredients like fig jam, Calabrian chili peppers and hot honey, according to WOODTV.com. Maier expects the classic Italian — loaded with pepperoni, salami, ham, pepperoncinis, provolone, deli dressing and shredded lettuce — to be the bestseller, though a caprese option with fresh mozzarella, basil and balsamic glaze will also be on offer. Sandwiches are expected to run $12 to $16.
Chicken salad will get its own spotlight, with four varieties sold by the quart: a recipe called mom's chicken salad with grapes, almonds and celery, a version with pepperoncini, pepper and onion, a sundried tomato pesto chicken salad with feta, and a curry chicken salad with cranberries, celery and onion. The shop also plans to serve soups that can be paired into soup-and-sandwich combos, the station reports.
Counter Service With Room to Sit
Maier describes the setup as resembling a glorified Subway, with customers ordering and moving down a line as sandwiches are made, per WOODTV.com. A case of grab-and-go chicken salads and wraps will sit near checkout for those in a hurry, while the shop will also offer seating for about 18 people for customers who want to stay and connect before taking food to go.
Maier and her husband, a general contractor, have spent months working on the space together, according to the same report. No official opening date has been set yet, though Maier is targeting before Thanksgiving. She told WOODTV.com she believes the shop will fill a gap on that section of 8th Street.
A Prime Spot on Holland's Heated Sidewalks
The storefront sits along Downtown Holland's snowmelt system, a municipally owned network that circulates 95-degree water through 190 miles of underground tubing to keep streets and sidewalks free of ice without road salt, according to Downtown Holland. First installed in 1988, it's billed as the largest publicly owned municipal snowmelt network in North America, which could help keep foot traffic steady through the winter months after Mariner's Market opens.
The building itself was part of the West Eighth Street Development, a revitalization project valued at more than $30 million that added retail space, a movie theater and upper-floor apartments when it was completed around 2019, according to Grand Haven Township records. Downtown Holland's West End is seeing further growth this year, with two projects along 7th Street and Pine Avenue adding more than 140 residential units and ground-floor commercial space within walking distance of 8th Street, the Holland Sentinel reported, with GDK Construction breaking ground on the Pine Avenue site for an estimated 18-month buildout.
Mariner's Market arrives amid a broader 2026 push toward fast-casual concepts in Holland, following the recent opening of Falam's build-your-own ramen shop, which Hoodline reported reflects rising demand among downtown workers and visitors for quick, customizable dining options.
