Jersey Mike's is bringing a new sub shop to Bates Towne Crossing in Aubrey, Texas, with franchise owner Lee Snodgrass set to lead the location. Snodgrass brings more than two decades of experience with the sandwich chain, having started as a shift manager before working up to a multi-unit owner.

According to WhatNow, business filings list the new restaurant's address as 26556 E. University Dr., Suite 100, Aubrey, Texas 76227. That same report describes Snodgrass as the franchise owner leading the project, and says the shop is expected to serve Jersey Mike's full menu of hot and cold subs inside the brand's signature store design.

Menu staples expected at the new location include the Jersey Shore's Favorite, built with provolone, ham and cappacuolo, along with the Big Kahuna Chicken Cheese Steak, loaded with grilled onions, peppers, mushrooms, jalapeños and extra white American cheese. There's also the Club Supreme, which combines roast beef, turkey, swiss, applewood smoked bacon and mayonnaise. Customers can order any sandwich Mike's Way, piled with onions, lettuce, tomatoes, an olive oil blend, red wine vinegar and spices.

Construction Timeline

Exactly when construction gets underway is unclear. The WhatNow report states that construction on the new location will begin in December 2026 and wrap up by the end of May 2027.

Jersey Mike's recently surpassed Chick-fil-A for the highest customer satisfaction rating among the nation's quick-service restaurants, according to the same USA Today report, ending Chick-fil-A's decade-long run atop the American Customer Satisfaction Index's rankings for the category.

For Aubrey, the arrival of a Jersey Mike's inside Bates Towne Crossing adds another name to a fast-growing roster of Texas openings for the chain. With Snodgrass's two decades of hands-on experience steering the new shop, the location joins a brand that's been adding sandwich counters across the state at a brisk pace.
