A Kansas City grocery chain has launched a discount store.
The soft opening took place at 8700 E. 63rd St. in Brywood Center, the same building that housed a traditional Price Chopper until recently, according to Startland News. Cosentino's Food Stores, the family-owned company behind the brand, says the new format will still carry quality meats, triple-inspected fresh produce, deli and hot food selections, national brands, private labels, and bakery items — the full lineup of a conventional grocery store, just priced differently.
John Cosentino, a co-owner of Cosentino's Food Stores, discussed the new format with the outlet. He said he spent more than a year studying the no-frills, cost-plus-10-percent model as it played out in other markets before bringing it to Kansas City, calling it a “proven game-changer” for independent retailers.
Staffing Shrank Through Attrition, Not Layoffs
The shift to a leaner operating model also means a leaner staff. The former Price Chopper at the site employed about 100 people a year ago; ChopMore! now runs with roughly 60. Cosentino said the company did not lay off any workers to get there — instead, staffing was gradually reduced through attrition as the format was developed.
Casie Broker was recently promoted to chief marketing officer at Price Chopper Enterprises.
Rising Food and Fuel Costs Are Squeezing Shoppers
The timing lines up with a rough stretch for grocery budgets. As reported by KSHB, the Producer Price Index showed goods prices jumped 2.6 percent in September — the largest monthly increase since December 2009 — with fresh food costs up more than 8 percent and fuel prices up 21 percent.
Shoppers interviewed by that station described adjusting their habits in response: leaning more on generic and store brands, and buying groceries as needed instead of stocking up the way they once did.
A Family Grocery Legacy
The Cosentino's business was developed 61 years ago.
The company is putting real money behind its expansion plans, with an estimated $40 million investment for remodels and new locations in 2026. A new Price Chopper is set to replace the current Pleasant Hill location in 2027, and the company also plans to remodel its Liberty Price Chopper that same year.
A Broader Reshuffling of Kansas City-Area Grocery Real Estate
The Brywood Center conversion isn't the only recent shakeup tied to the Price Chopper name. Cosentino's closed its Price Chopper at Rosana Square in Overland Park earlier in 2026. That space didn't stay empty for long — Hy-Vee has since filed plans to open a roughly 66,000-square-foot store there, according to the Johnson County Post, with proposed additions including a pharmacy drive-thru and new loading docks.
For now, ChopMore! is open daily from 8 a.m. to 8 p.m. near Raytown.
