FnB is where Milic first built out Arizona's all-local wine program, laying the groundwork for what would eventually become the Los Milics label.

From Elgin Vineyard to Urban Wine Bar

Pavle and Ita Milic launched Los Milics back in 2014 in collaboration with Dos Cabezas Wineworks, before partnering in 2018 with former aviation consultant Mo Garfinkle to plant their own 20-acre estate vineyard in Elgin, per Visit Arizona. That estate sits in the high-desert grasslands of Santa Cruz County, within the Sonoita American Viticultural Area — Arizona's first AVA, established in October 1984, with vineyard sites perched between 4,500 and 5,000 feet, according to Wine Enthusiast. The elevation and climate there shape the winery's focus on varietals built for high-desert growing, including Petit Verdot, Grenache, Tempranillo, Petit Manseng, Vermentino, and Montepulciano, as Wallpaper* has reported.

A Wider Arizona Footprint

The Scottsdale reopening is part of a broader expansion for Los Milics beyond its Elgin roots. The winery's Elgin property still includes its original tasting room, the Biscuit dinner spot, and boutique casitas, and in November 2025 the company expanded further by acquiring a venue on East Congress Street in historic downtown Tucson, according to the Arizona Daily Star. That Tucson space offers glass pours and bottle sales alongside chef-curated small plates, giving the brand a tasting room and bistro presence in Arizona's two biggest metro wine markets.

Executive Chef Trevor Routman joined Los Milics in June 2025 as director of culinary operations, designing seasonal bistro and tasting menus across both the Elgin vineyard and the urban tasting rooms, the Phoenix New Times has reported. Routman's culinary direction appears to be behind the Old Town location's new emphasis on hand-pulled mozzarella, turning what used to be a straightforward wine-tasting stop into something closer to a full food-and-wine pairing experience.
