Albatross, a new collaboration from Giovanny Artiga, Eliot Hillis and Seth Parker, is preparing to bring a French-style doner sandwich to Milk District events. Its menu draws on Silk Road spices and dishes spanning ancient and contemporary food traditions.

As Orlando Weekly reported, the centerpiece is Big Bread, a French-style doner sandwich built in a fresh-baked rustic baguette hollowed out like a pita. Tomato, lettuce, sumac, onion, harissa and chili-mayo samouraï sauce go alongside a choice of chicken shawarma, beef meatballs, falafel waffles or roasted mushrooms. The falafel waffles and roasted mushrooms are vegan-friendly.

A Menu Built Along an Ancient Trade Route

Artiga told the outlet that the concept takes inspiration from the Silk Road and the spices and dishes shaped by the route over time. Alongside Big Bread, the menu includes a Big Bowl with rice, flatbread, curried lentils, herb yogurt and pickles, plus a choice of protein. There is also chicken and dumplings with jalapeño and lime, with sides of curried lentils, couscous salad and cucumber salad.

The menu’s through-line is the team’s effort to bring older food traditions into a contemporary food-truck setting, as described in the report.

A Rebranded Truck Hits the Road

Artiga, Hillis and Parker have acquired Hapa Halo’s food truck and plan to rebrand it. The group told Orlando Weekly it hopes to take Albatross to events including Tasty Takeover, Milk Mart and Goblin Market, as well as breweries Redlight Redlight, Tactical Brewing and Hourglass Brewing.

Albatross is slated to debut at Tasty Takeover in the Milk District, according to the outlet. The weekly gathering runs Tuesdays from 6:30 to 10 p.m. in the back parking lots at 2424 E. Robinson St., per Orlando Date Night Guide. It typically features about 13 food trucks, with portions generally priced between $8 and $12.

A Longstanding Orlando Food-Truck Gathering

Tasty Takeover says it has been bringing food trucks and pop-ups to Orlando since 2011.

Should Albatross make it to Milk Mart, it would join a much larger showcase of local talent. Milk Mart is a quarterly art and food festival held at the Robinson and Bumby intersection in the Milk District, featuring more than 300 local artists, chefs, makers and businesses. For now, though, all eyes are on that first Tuesday night rollout, where Big Bread will get its first real test in front of Orlando diners.
