A wood-fired pizza concept from the Lake Norman area is staking a claim inside one of Cabarrus County's most talked-about food destinations. Meadow's Woodfired has signed a deal to join Gibson Mill Market, the Concord food hall built inside a historic textile mill, expanding its footprint beyond its original Mooresville storefront.

Meadow's Woodfired plans to offer 10-inch and 16-inch wood-fired pizzas alongside specialty pies such as a Spicy Pickle Pizza topped with chicken sausage and hot honey, according to Charlotte Business Journal. The menu will also lean into Italian-inspired dishes alongside the pizza lineup, giving Cabarrus County diners another sit-down option within the sprawling mill complex.

Meadow's Woodfired's original brick-and-mortar location and mobile event-catering pizza oven remain in Mooresville, where the business has served wood-fired pizzas, subs, and salads across the Lake Norman area, per 6AM City. The Concord spot will mark the business's second permanent location.

A Mill Built for Gingham, Now Built for Pizza

Gibson Mill Market occupies a corner of the 656,000-square-foot Gibson Mill complex at 325 McGill Ave. NW, a site that first opened in 1899 as Plant No. 6 for the Cannon Mills Company, originally established as Gibson Manufacturing Company. The mill churned out gingham, towels, and sheets before shutting down in 2003, according to the same Charlotte Business Journal report. Today the campus is undergoing a very different kind of production run, one built around food stalls, breweries, and antiques instead of textiles.

The food hall itself launched its first wave of stalls in October 2022 inside a 17,000-square-foot space, with vendor startup costs estimated between $50,000 and $65,000 — a structure designed to function as a low-cost incubator for independent regional concepts rather than national chains, the outlet's 2022 coverage noted. High Branch Brewing Co. became the market's first signed tenant back in 2019, expanding its footprint on campus from 2,450 to 5,400 square feet to kick off phase-one development, per Brewbound.

Joining a Growing Roster of Food Hall Vendors

Meadow's Woodfired will join an established lineup of Gibson Mill Market food and beverage vendors that includes Thai Esane, Taco Street, Johnny Roger's BBQ & Burgers, Petalcakes, Gelato di Luna, Cabarrus Brewing Co., and High Branch Brewing Co., the Business Journal reported. The addition continues a pattern of established dining names gravitating toward the mill campus rather than opening fresh elsewhere in Cabarrus County.

That pattern includes longtime downtown Concord restaurant Gianni's Trattoria, which relocated from Union Street to Gibson Mill Market earlier in 2026 to escape rising downtown lease costs and construction disruption, as Hoodline previously reported. After more than 15 years operating in downtown Concord, Gianni's made the move to the mill's food hall.

New Ownership Fuels the Leasing Push

Charlotte-based real estate firm White Point Partners acquired an ownership stake in Gibson Mill earlier in 2026 through a recapitalization agreement alongside long-time owner George Liles, with White Point's brokerage team now handling site leasing, the Business Journal reported. Liles and his co-investors originally purchased the shuttered mill back in 2004, steering its decades-long transformation from empty textile plant to mixed-use destination.

Beyond the food hall, the Gibson Mill complex also houses The Depot at Gibson Mill, which features more than 750 vendor booths across 88,000 square feet and is recognized as the largest antique mall in the Southeast, according to Matador Network. That retail anchor has long driven regional foot traffic to the property, giving incoming restaurants like Meadow's Woodfired a built-in customer base.

The expansion arrives amid a broader commercial real estate surge across Cabarrus County, including the $7.9 million acquisition of SouthUnion Shopping Center, while Hoodline has reported restaurant changes in Concord. For now, Meadow's Woodfired has not announced a specific opening date, and it remains unclear how White Point Partners plans to fill the food hall's remaining stall spaces.
