A new bakery has quietly taken root in McKinney, and it's doing croissants the slow way. Diamond Pastry, a pastry and coffee shop, opened in McKinney in August and now plans a grand opening event on Saturday, October 17, at its storefront at 4100 Ridge Road, Suite 100.

Owner and baker Mona Aghajani built the shop's menu around sweet and savory pastries made with organic ingredients, according to Community Impact. The bakery sources King Arthur flour, Callebaut chocolate, Cucina Viva pistachio, and 82% fat Plugrá butter, per the same report, and rounds out its offerings with locally sourced coffee beans. Diamond Pastry also crafts its croissants using a real sourdough starter base rather than relying on yeast alone, according to the bakery's own Instagram

posts.

The menu leans into that craft approach with a chocolate almond croissant and a turkey and cheese croissant alongside a blueberry cheese danish and a baklava danish, the station's report notes. Cakes, tarts, muffins, cookies, sandwiches, and seasonal treats round out the case, and the shop has seating meant for people working or for couples and families socializing over coffee. A representative told the outlet the shop has something customers will love.

Diamond Pastry's Ridge Commons Location

Diamond Pastry's suite sits inside Ridge Commons Shopping Center. Sloan Corners is a planned 261-acre mixed-use development at Sam Rayburn Tollway and U.S. 75, with office, retail, and residential uses, according to Levy Retail Group.

For now, the bakery is open 7 a.m. to 7 p.m. Tuesday through Saturday and 9 a.m. to 2 p.m. on Sunday, closing Mondays, according to DoorDash listings.

A City Growing Fast — and Changing Shape

The city's population was estimated at 237,130 in January 2026, according to the City of McKinney.

McKinney has also had announcements for new bakery concepts. In August, national dessert franchise Swrl Cinnamon Roll Factory planned an opening in McKinney at 2950 Craig Drive, following Paris Baguette's second McKinney café announcement on South Custer Road, Hoodline previously reported.

U.S. Specialty Bakery Market

The U.S. specialty bakery market was valued at $6.27 billion in 2024 and is projected to grow to $9.02 billion by 2032, per Credence Research.

McKinney's own municipal structure has helped fuel that kind of commercial growth. The city splits a one-cent sales tax equally between the McKinney Economic Development Corporation, which handles business recruitment, and the McKinney Community Development Corporation, which has invested more than $330 million into local amenities and community spaces over three decades, according to Local Profile.
