Construction crews are already at work on a new PopUp Bagels shop inside The Commons at Calabasas, marking the viral bagel chain's third foothold in the Los Angeles area in less than a year. The new shop will sit at 4799 Commons Way, though no opening date has been set.

The Calabasas project is part of PopUp Bagels' broader Southern California expansion, which is being led by franchisee group Sweetzer Capital, according to WhatNow. That group signed an agreement in 2025 to develop 25 PopUp Bagels locations across Los Angeles and Orange counties, per the same outlet's reporting. Calabasas joins Brentwood and Studio City as the brand's third stop in the region, with construction already underway even as the company stays quiet on timing.

From Pandemic Hobby to Coast-to-Coast Chain

PopUp Bagels got its start far from the San Fernando Valley. Founder Adam Goldberg began the brand in 2020 as a home project during the pandemic before opening the first standalone shop in New York in 2021, according to Eater LA. The chain built a following around its hands-on approach to serving bagels hot and whole, encouraging customers to “Grip, Rip and Dip” pieces straight into cream cheese spreads rather than slicing them into sandwiches. The menu features several bagel varieties alongside a rotating lineup of classic and specialty schmears, the report notes.

The brand made its West Coast debut in La Jolla on November 21, Eater LA reported, before pushing north into Los Angeles proper. Its first LA location opened in Brentwood at 11710 San Vicente Boulevard in December 2025, where the shop has operated daily from 7 a.m. to 3 p.m. Company materials cited in a 2025 release from GlobeNewswire describe the chain's retail spaces as typically spanning about 1,100 square feet.

Studio City Opened Just Months Ago

PopUp Bagels didn't stop at Brentwood. A Studio City location at 12184 Ventura Boulevard opened in August, becoming the brand's second Los Angeles-area shop, per the WhatNow report. With Calabasas now under construction, the chain is quickly filling in the western San Fernando Valley and surrounding communities, building toward a much larger regional footprint.

That footprint is ambitious. The same GlobeNewswire release outlined plans to open 35 locations across Southern California over the next several years: 25 in Los Angeles and Orange counties under Sweetzer Capital's agreement, and 10 in San Diego County under The Bagel Boyz's agreement. Calabasas residents can expect the hot, whole bagels and dip-your-own cream cheese routine to arrive eventually — just without a confirmed date yet.
