Chef Daniel Bolaños and event planner Katie Sahadi are opening up their dining room to a wider crowd with the launch of Saed Supper Club, a new four-course, wine-paired dinner series debuting Saturday, Nov. 14, at Fitzgerald's Wine Bar in Ashtabula. Thirty seats are available at $165 apiece for the inaugural dinner, which starts at 5:30 p.m.
Saed is described as a restaurant concept that provides dining experiences for hire, according to cleveland.com. The supper club marks an expansion of that model, giving a broader audience the chance to sit down to a Bolaños-designed menu rather than booking a private event. Sahadi said the move answers demand she's seen building around the chef's cooking.
“We're answering a demand for more people to experience Daniel's cooking,” Sahadi said, according to the outlet's report. She also said the concept grew out of creating intimate experiences for private clients and building a community around Saed, and that the goal for the supper club dinners is to feel elevated yet approachable while fostering connection across the table.
What's On the Table Nov. 14
The debut dinner follows a family-style format with four courses. An amuse-bouche of chilled plum soup with ginger, clove and citrus opens the meal, followed by a first course of roasted beets with whipped feta, pistachios, fresh herbs and a Dijon-sherry vinaigrette, per the same report.
The entrée is ancho chile-braised short ribs served with goat cheese citrus polenta, roasted root vegetables and demi-glace. Dessert closes things out with a charred corn crème brûlée topped with duck fat popcorn, maple whip and smoked flaky salt — a finale built to balance sweet and savory in one bite.
Backgrounds Built Over Decades in Cleveland Kitchens
Bolaños brings credentials beyond the plate: he was selected for the James Beard Foundation Legacy Network, according to Saed's website. Sahadi's own path runs through front-of-house work, rising through the ranks to become a general manager, event planner and award-winning mixologist, the site states.
Together, the Saed team says it has spent more than three decades refining its craft in some of Cleveland's most celebrated restaurants. The business describes its offerings as intimate, curated experiences ranging from baby showers to five-course wine pairings, positioning the new supper club as a natural next step rather than a departure from its existing work.
Where to Find the Dinner
Saturday's event takes place at Fitzgerald's Wine Bar, located at 1023 Bridge St. in Ashtabula. With just 30 seats and a $165 price tag covering four courses and wine pairings, the debut dinner is positioned as a small, ticketed gathering rather than a standing restaurant service.
