A Mexican breakfast spot with coffee sourced straight from Mexico is coming to San Diego's Adams Avenue, with owners Norma and Diego Marquez targeting an early 2027 opening at 2611 Adams Avenue. The couple, who previously ran Coleta at Market on 8th in National City, is now building out their first restaurant entirely on their own, in the space most recently occupied by Una Más on Adams.
Coleta Cocina plans to open at 2611 Adams Avenue in early 2027, pending permits, according to WhatNow. Norma Marquez said the owners hope to open at the beginning of 2027 as soon as possible, with city permits currently the main factor determining the timeline. The roughly 3,500-square-foot space includes an outdoor patio of about 2,500 square feet, according to SanDiegoVille.
Coffee will be central to the concept. “Our main focus is going to be our coffee, which will be sourced from Mexico,” the owners told the outlet, which also reports the restaurant will offer specialty wine and beer alongside its Mexican breakfast menu. The design is planned around a modern Mexican-inspired look, and the Marquezes intend to keep and renovate the children's area that was already built into the previous space, per the same account.
A Gathering Space Built Around Community
Beyond the menu, the couple is framing Coleta Cocina as a community hub. Norma Marquez hopes to host activities such as flower-arranging workshops and small gatherings for local business owners, and the restaurant's large patio is intended to support those kinds of community events. The Marquezes said they were drawn to the neighborhood's residential character, family-friendly atmosphere and existing cluster of local businesses when scouting the Adams Avenue location.
The name itself carries personal weight. Coleta Cocina is named after Diego Marquez's grandmother's nickname — Coleta — a woman from Sonora, Mexico, SanDiegoVille reports. Norma and Diego Marquez were born in Tijuana and have lived between Tijuana and San Diego, with family roots tracing back to Guadalajara and Sonora. Norma Marquez said the owners hope to honor Mexican culture and their roots while earning community support for the new restaurant.
From a National City Food Hall to a Standalone Restaurant
This marks a shift for the Marquezes, who left the Market on 8th food hall in National City and closed the original Coleta after their time there ended. The Adams Avenue location is described as their first standalone project built entirely around their Mexican breakfast concept, a step up from operating inside a shared food hall setting.
The space has seen recent turnover. Una Más on Adams opened in July 2025 and announced its permanent closure in October 2026 after about 15 months of operation, according to SanDiegoVille's reporting. Coleta Cocina is now moving into that same address as the Marquezes attempt to establish their own brand on the strip.
Looking ahead, the owners say they may consider expansion after seeing how the Adams Avenue location performs, rather than committing to additional sites right away. Norma Marquez has also named Chula Vista as a dream location if the right opportunity arises down the line, though any further growth remains contingent on how the first restaurant fares once it opens.
