Toast + Tonic Creative Kitchen in Mystic poured its final round of brunch cocktails on Saturday, October 31, closing the doors on a spot known for crab omelets, frittatas and specialty lattes after six years in business. Chef-owner Aimee Filippetti announced the closure the day before, saying it was time to step away and spend more time with her growing family.
A Final Service in Olde Mistick Village
According to CT Insider, Toast + Tonic Creative Kitchen closed in Olde Mistick Village after six years serving the shoreline community, with its final service held on October 31. The restaurant built a loyal following for its brunch menu, which included classic eggs benny, breakfast sandwiches and seasonal coffee drinks like white chocolate pumpkin and chocolate pistachio lattes. Craft cocktails and sweets baked in-house also helped define the spot, according to Patch.
Filippetti, identified in the report as chef-owner of the restaurant, said she made the decision to focus on her family. “It’s time for me to step away from the restaurant and spend more time with my growing family,” she said, per the same account. She added that she was looking forward to slowing down and being present for her son's childhood.
What's Next for the Space
Never Enough Bake Shop, which operated at the same Olde Mistick Village location and served sweets and baked goods including cakes, also closed. Filippetti said the businesses were passing the space along to new owners who would renovate it and bring it new life, a sentiment that aligns with reporting from Patch indicating new owners are expected to take over the address at 27 Coogan Blvd.
The timeline behind the restaurant's founding carries some conflicting details. Patch described Toast + Tonic as having been in business for six years at the time of its closure, while a separate Hartford Business report on a 2025 SBA award states that “in 2023, toast + tonic creative kitchen was born,” tying its founding to a Women's Business Development Council grant that helped restructure the business from a previous concept called Bleu Squid. The available reporting does not reconcile those two timelines.
That same Hartford Business report notes that Filippetti first launched Never Enough Bake Shop at the Ledyard Farmers Market in 2020, years before the Toast + Tonic storefront took shape in Olde Mistick Village. It also identifies Aimee and Gail Filippetti as co-owners of Toast + Tonic Creative Kitchen.
