This Saturday, August 31st, has been dubbed International Bacon Day by... someone, somewhere. And to celebrate, the local porkmasters at Memphis Minnie's (who, full disclosure, are Haighteration sponsors) are going whole hog. On Saturday, the restaurant will be featuring no fewer than a dozen bacon-based dishes. They include: The Elvis - A griddled peanut butter, banana, and bacon sandwich Bacon Mac & Cheese - Bacon in the roux, bacon in the sauce, and bacon in the cornbread topping Bacon-wrapped Tofu - Tofu marinated in BBQ sauce, wrapped in bacon, smoked and deep fried Chicken Fried Bacon - Two strips of smoked bacon double-dipped in seasoned cornmeal, fried, and topped with bacon gravy. Candied Pork Belly - Extra-thick cut bacon coated in maple syrup, brown sugar and seasonings, baked, and then grilled Caramel Bacon Popcorn - Two kinds of popcorn -- one seasoned with savory white rub, one coated in bacon caramel sauce -- tossed together All week long, Minnie's is previewing one dish per day. Tuesday was Pecan Bacon Banana Puddin', yesterday The Elvis, today it's a Smoked Turkey & Bacon Club, and tomorrow it's Bacon Mac & Cheese. Then, Saturday's the big bacon bonanza, from 11am to 10pm.
