We first heard of it back in February, and now the day is here -- local butchery Fatted Calf has a new cookbook that's officially out today.

The book is called In the Charcuterie, and is described by Fatted Calf as "a definitive resource for the modern meat lover." It features 125 recipes and instructions for making "brined, smoked, cured, skewered, braised, rolled, tied, and stuffed meats" at home, plus sections like "The Charcutier's Pantry," "Provisioning the Larder," and "Butcher Shop Lingo." It has a list price of $40, but is currently available on Amazon for $24 and iTunes for $19.99. Fatted Calf opened its first retail location in Napa in 2008 and followed here in Hayes Valley at 320 Fell Street in 2010. They also sell at the Ferry Building Farmers' Market. Over the next month or so, they'll be having several book signings around the Bay Area to celebrate the cookbook's launch. Check out their calendar for details.
