Charles Bililies, as you may recall from our recent story about Souvla, was inspired to learn Greek cooking from watching his grandfather roast all day on Greek Easter. He's been honing his restaurant skills at some well-known local establishments over the years, while roasting with "souvlas" (large rotisserie skewers) at his home in Outer Richmond.

Now he's brought the two together with the new Greek sandwich shop he opened this week at 517 Hayes Street. Here's our quick walking tour of the space and what you'll expect when you arrive. 

Sandwiched between Yoga Tree and Patxi's, Souvla has a few seats on the sidewalk that lean into the bar (as seen above in the cover photo). When you walk through the entrance, you'll see the entire layout of the restaurant:



Immediately to your right is the bar where they serve Greek wine (champagne, white, rosé, and red), Greek beer (Mythos), and Greek Cherry Spritz: 



They also have Greek frozen yogurt up here. Your choices are Greek Olive Oil & Flaky Sea Salt, Baklava Crumbles & Syrup, and Greek Sour Cherry Preserve:



There are high tables along the wall to your left with enough seating for 4 people:

We know what you're thinking: "enough with the decor, we're starving!" Got it. Let's check out the menu. While there are a few sides like Greek Fries, Juicy Potatoes and Yogurt Sauce, the menu is very simple. You get your choice of 4 types of sandwiches (or dishes):

Souvla is now open Tuesday-Sunday, 11am-10pm. Look for them to extend that to 7 days a week in the near future.
