The restaurant opened its doors in the space that used to house the former Canyon restaurant, and its menu, curated by culinary director Daniel Ganem, is a celebration of local ingredients, infused with a modern twist.
According to Eater Miami, at the heart of Daniel's menu are Florida-sourced ingredients that take center stage in dishes like Swank Farms kale and hearts of palm salad, Florida burrata, and Arrowhead Ranch wagyu tartare complemented by Kaluga caviar, the latter promising an exquisite blend of local ranching and global flavors. The main courses are just as focused on local produce, with offerings such as Joyce Farms half-roasted chicken adorned with black truffles and preserved lemon butter and braised Suwannee River wagyu beef short rib that's paired with potato fonduta and Gratitude Farms mushrooms.
Local culture is evident in the drink selections, with bar manager Daniel Bishop focusing on local spirits and beers while creating a diverse cocktail menu. Happy Hour features drinks that honor the restaurant’s predecessor, including the Canyon Margarita and Canyon Paloma. The steakhouse also plans to continue the tradition of monthly wine dinners, a concept carried over from their sister restaurant, Fiola Miami, as per the Miami New Times.
