According to Palo Alto Online, Hatched officially opened on January 6 and is the brothers' first dedicated breakfast brick-and-mortar in Palo Alto. The outlet identifies Brandon Poon as the eldest and head chef, Clifton Poon as the middle brother and CFO, and Craighton Poon as the youngest, who oversees expansion and construction.

Hatched leans hard into eggs and toast. Its online ordering platform highlights the Sunnyside, described as toasted French bread piled with smashed avocado and topped with a fried egg, alongside The Ono fried chicken sandwich, which layers 24-hour marinated chicken with a runny egg. The Poon brothers are not new faces at Town & Country. They already run Roost & Roast and maintain a presence at Kurated Kitchens in Sunnyvale, where they test concepts and menus. Their parents emigrated from Cambodia and Hong Kong and opened a Chinese restaurant in Mountain View, a family backstory noted by Palo Alto Online. Roost & Roast still lists a Town & Country Village address just a few doors away from Hatched, according to Roost & Roast.
