From obsession to oven
"I think I started being obsessed with croissants when I made my first one in 2018," owner Eli Fuhrman said, tracing the passion that eventually pushed him to open his own shop after honing his technique in Colorado. Fuhrman said the pink-and-green Maven building "just felt like it should be a bakery," and he signed the lease soon after seeing the space. The shop has been selling out most weekends as customers work their way through the laminated lineup, a development Fuhrman called both surprising and gratifying, as reported by FOX 13.
How the croissants are made
Fuhrman says croissants "start their life as a bread dough," which makes mixing, fermentation and careful lamination critical to the final result. He told FOX 13 that each batch takes about three days from mixing to the finished product, a schedule that helps explain the bakery’s small-batch approach. That multi-day rhythm is as much a business strategy as a technical choice, since it lets the team keep close tabs on quality instead of trying to flood the case.
