Founder Kelly Sergott, an Encinitas local who says the concept is inspired by her Appalachian "holler" roots, welcomed neighbors at the ribbon-cutting with the Encinitas Chamber and Encinitas 101 MainStreet Association, according to The San Diego Union-Tribune. Juice Holler’s menu sticks to clean, all-natural ingredients, with no refined sugars or seed oils in the mix. One signature drink is the Encinitas Glow, made with pineapple, cucumber, apple, kale and spirulina. Another headliner is the Supercharger smoothie, a blend of banana, almond butter, blue spirulina, maca, raw cacao nibs, Medjool dates, coconut milk and grass-fed whey protein. Inside, the roughly 1,300-square-foot space is set up with communal tables, free Wi‑Fi and a street-side patio, and the café brought in artist Skye Walker to paint a custom mural that leans into the community vibe, the Union-Tribune reports. Sergott describes Juice Holler as a neighborhood "third space" for remote work, pop-ups and wellness workshops, according to the reporting.

The café lists daily hours from 8 AM to 4 PM, and Sergott told early-coverage outlets she is planning rotating seasonal specials, local collaborations and programming designed to keep neighbors coming back, according to Patch. With Encinitas’ wellness scene on the rise, Juice Holler is betting that a tightly curated, functional menu paired with a social, shared space will be enough to stand out.
