Colletta, the American Italian concept from The Indigo Road Hospitality Group, is slated to arrive this summer inside The Westin Riverfront Resort & Spa in Avon, bringing scratch-made pastas, house-made pizzas, and an expansive patio framed by Beaver Creek Mountain. The nationally recognized, design-forward restaurant is expected to cater to both apres-ski regulars and destination diners, with a warm dining room, an open wood-fired kitchen, and a charcuterie bar built around a hand-crank Berkel slicer.
According to Mile High CRE, Colletta will serve dinner nightly and roll out weekend brunch, led by The Westin Riverfront's executive chef Angel Munoz and supported by Josh Begley, Indigo Road's culinary director for Italian concepts. The menu sticks to the brand's calling cards of scratch-made pastas, house-made pizzas, and antipasti while adding dishes tailored to the Vail Valley crowd, including Colorado bass, ravioli puttanesca, elk saltimbocca, and rabbit piccata. "Opening Colletta in the Vail Valley is a really special moment for us as we head west for the first time," Steve Palmer told Mile High CRE.

The Colletta brand sits under The Indigo Road Hospitality Group, a Charleston-based operator that runs restaurants and boutique hotels around the country. Indigo Road already has Colletta locations in Atlanta and Cary, North Carolina, and the Vail Valley outpost is expected to lean into the group's signature design-forward, family-style approach.

Colletta will occupy space inside The Westin Riverfront Resort & Spa on Riverfront Lane, with an expansive patio outfitted with fire pits and a full-service outdoor bar overlooking the Eagle River and Beaver Creek Mountain. The hotel lists Colletta as opening in summer 2026 and positions the new Italian concept alongside the resort's existing food and beverage outlets.
