Eater Chicago reports that pastry chef Hannah Tillett and architect Mike Banaszak launched Tilly as a pandemic pop-up, then turned it into a brick-and-mortar operation with a South Loop shop in 2023 before expanding to Fulton Market. That Fulton Market space gave the team more production muscle to handle heavy weekend demand and to roll out a fuller lineup of bagel sandwiches and coffee.
What Now Chicago reported on May 14 that the owners secured a business permit for 3162 N Broadway and are in the process of installing the kitchen, and that the Lakeview storefront already sports its signage. The outlet notes this will be Tilly Bagel's first North Side location, and that an official opening date is still under wraps.

Tilly Bagel describes a small-batch sourdough fermentation process that produces bagels with a blistered crust and chewy interior.
