
Pür & Simple, the Montreal-born breakfast chain that planted its first U.S. flag in Stone Ridge last summer, is getting comfortable in San Antonio. The brand is lining up a second local spot at The Merc on UTSA Boulevard, just a short hop from the Roadrunner campus, setting up one more excuse to linger over pancakes on the northwest side.
Lease Filed For UTSA-Area Retail Site
As reported by MySA, a Texas Department of Licensing and Regulation filing submitted May 11 shows Pür & Simple has signed a lease for a 2,960-square-foot unit at 5730 UTSA Blvd. Franchise operators expect to sink about $800,000 into the build-out, with construction targeted to begin this fall and wrap up around Dec. 1, 2026. Project records on the Texas Department of Licensing and Regulation website also list 5730 UTSA Blvd as part of The Merc retail shell review.
Brand Footprint And What Diners Can Expect
Pür & Simple traces its roots to Quebec and, according to the Pür & Simple website, operates more than 65 locations across Canada. The chain's store locator now lists "San Antonio – The Merc, UTSA Blvd (COMING SOON)" at 5730 UTSA Boulevard, staking a claim before the doors are even built. The first San Antonio outpost opened in Stone Ridge at 20821 U.S. Highway 281 N., Suite 116 in July 2025 and continues to serve breakfast and lunch, according to the Express-News.
Franchise Partner Says San Antonio Was Hungry For It
Franchise partner Rafael Mendible has said the concept was a natural fit for the local dining scene. "I felt that there was a space in the San Antonio market," he told MySA when the first location launched, hinting at plenty of room between existing breakfast staples. Industry coverage backs up the broader strategy, with trade reporting on the brand's franchising plans noting that Pür & Simple is actively building out American sites as part of a multi-unit growth push that includes additional Texas and South Florida opportunities, per Franchise Dictionary Magazine.

The Merc site is poised to add another morning-and-lunch option for students, staff, and nearby residents as the development fills in with more retail. For anyone weighing lecture halls against lattes, it could become familiar territory. Pür & Simple has not announced a grand-opening date for the UTSA Boulevard address, and for now the chain's public listings simply mark the spot as "coming soon."
