
Brickell is getting another dose of quinoa and cold-pressed juice. Carrot Express, the Miami-born healthy fast-casual chain, is gearing up to open a second neighborhood outpost this fall at 1057 Brickell Plaza, adding one more quick, health-focused option to an already packed dining scene.
Carrot Express lists 1057 Brickell Plaza as a "coming soon" location. The planned build-out will span about 1,362 square feet and seat roughly 52 guests, with room for around 32 diners inside and another 20 on an outdoor patio, according to WhatNow. The address drops the new shop into Paseo Brickell, a slim retail strip tucked right next to Brickell City Centre.
A leasing announcement pegs the unit at roughly 2,060 square feet, per FA Commercial, while a landlord's broker has described it as closer to 2,100 square feet, according to The Real Deal. Those kinds of square-footage gaps are common in commercial listings and often come down to whether terraces or adjacent retail components make the cut. Either way, the lease makes it clear that Carrot Express is locking in a ground-floor spot along Paseo Brickell.
What to expect inside
Founded by Mario Laufer in a Miami Beach gas station in 1993, Carrot Express has grown into a regional staple with nearly 30 locations across South Florida and New York, according to Carrot Express. The Brickell newcomer is expected to stick to the brand's established playbook of all-day breakfast, salads, grain bowls, wraps, sandwiches, smoothies and fresh juices, a lineup detailed by WhatNow.
The chain already runs a Brickell outpost at the Sabadell Financial Center at 1111 Brickell Avenue, and this new lease will mark its second storefront in the neighborhood, as noted by The Real Deal. Brokers say the deal is part of a broader wave of retail signings on Paseo Brickell that is steadily packing more food options into the ground-floor grid for residents and office workers.
The lease surfaced publicly in mid-2025 when FA Commercial announced the signing, but that update skipped a firm opening date. Until Carrot Express or the landlord circles a day on the calendar, Brickell locals watching the build-out will have to wait for the official "now open" call.
