
Chef Christian Hunter is putting down permanent roots on Logan Square's east side, planning to open his Hooligan bistro at 2528 N. California Avenue sometime in fall 2026, according to the restaurant. The Michelin Young Chef Award winner is folding coastal seafood traditions and Midwestern ingredients into one menu, with dishes including chicken liver parfait and radish paper dumplings already in the mix.
Hunter's path to this storefront runs through Fulton Market and Lincoln Square. As reported by WhatNow, Hooligan debuted as a 50-seat seafood and natural wine bar inside Time Out Market Chicago, where Hunter served oysters, gumbo with whitefish, and shrimp with mayo sauce while cooking over wood fires. That food hall closed permanently in January, a shutdown Hoodline previously reported was tied to inconsistent weekday traffic and rising costs at the 50,000-square-foot West Loop venue.
Before Hooligan, Hunter built his reputation at Atelier, where he arrived in February 2023 as opening executive chef and led the Lincoln Square tasting-menu spot to a Michelin star, according to the MICHELIN Guide, which also credits him with winning the inaugural Michelin Chicago Young Chef Award that year. Atelier itself closed permanently in May after financial difficulties following a relocation to Western Avenue, Hoodline reported in its piece on the Lincoln Square closure.
A Menu Rooted in Kentucky and the Midwest
Hunter was raised in Lexington, Kentucky, and that hometown connection shows up directly on the menu. Hooligan's signature caviar service pairs potato chips and house-made dip with American paddlefish caviar harvested near Lexington, according to WTTW Chicago.
The rest of the menu leans into classical French technique applied to Great Lakes ingredients. Chicago Food Magazine reports that Hunter is serving Great Lakes perch with sauce gribiche alongside pike quenelle ravioli finished in a traditional French Nantua sauce, sourcing regional produce through partnerships with Janie's Mill and Nichols Farm. Hunter has said Hooligan plans to serve dishes from the coasts and the Midwest, drawing on flavors from the deltas and coasts that shape the region.
Finding a Spot on the East Side of the Neighborhood
The planned restaurant sits on the east side of Logan Square, west of the neighborhood's center near the intersection of W. Logan Boulevard, roughly five blocks from Logan Square's core. Nearby businesses include Namaste and La Liquor Panamericana. Hunter has described the area as having a mix of high brow and low brow, and he has called the restaurant he is planning exactly the restaurant he has been chasing, though he has cautioned that the opening process remains early and development of the space is ongoing.
Before landing in Chicago, Hunter was named a 2023 James Beard Award finalist for Best Chef: Northeast while serving as executive chef at Community Table in Washington, Connecticut, per Chicago Food Magazine. During his time at Atelier, Hunter was Chicago's only Black chef helming a Michelin-starred restaurant and one of only two nationwide to hold that distinction, a landmark noted by The TRiiBE.
A Building With Its Own Dining History
The storefront at 2528 N. California Avenue carries its own history in Logan Square's restaurant scene. The space previously housed Good Fortune, a New American-Mediterranean restaurant that opened in August 2019, and before that, The General, a Southern taco and cocktail bar that opened in 2015, according to the MICHELIN Guide's local coverage.
No official opening date has been set, and Hunter has emphasized that the process is still in its early stages. In the meantime, Hooligan is posting updates through its Instagram account, @hooligan.chicago, as the buildout on California Avenue continues.
