Maxie's, the breakfast-lunch-dinner spot known for cereal milkshakes and cotton candy pancake towers on the Las Vegas Strip, is bringing its menu to Henderson this August. The new location at 1695 E. Cactus Ave. will include a restaurant and bar with a private dining room, plus a 130-seat event space shared with Aroma Café.
The opening was first reported by the Las Vegas Review-Journal, which notes the Henderson debut is planned for August 2026, per a Maxie's representative. The menu for the new location is still being completed, according to the same representative, though the Strip flagship offers a sense of what to expect: French toast topped with Fruity Pebbles, benedict boxes served in hollowed-out loaves, certified Angus beef sliders, a Philly cheesesteak, and dinner options like spaghetti and meatballs or blackened grilled salmon. Aroma Café, which will share the space, plans to serve coffee, fresh pastries and café classics.
Maxie's opened its original location in 2017 at The LINQ Promenade, the Caesars Entertainment-operated open-air district that spans more than 300,000 square feet and draws roughly 20 million visits a year, according to Acadia Realty Trust. The Strip location sits between The LINQ Hotel and Flamingo Las Vegas, a high-tourist-density backdrop that stands in sharp contrast to the suburban household base the brand is now targeting in West Henderson. Maxie's is part of a restaurant group that also includes KJ's Social Restaurant and Bar inside the English Hotel in downtown Las Vegas.
A Medical Corridor Built for Foot Traffic
The new Henderson project sits within The Village at St. Rose, an 11.7-acre mixed-use development at Cactus Avenue and St. Rose Parkway, according to a LoopNet listing. The complex is anchored by an 80,471-square-foot Optum medical facility under a 15-year lease, which the listing estimates generates roughly 7,500 daily employees, patients and visitors passing through the development. That kind of built-in daytime traffic has become a draw for restaurant operators eyeing West Henderson's expanding office and medical footprint.
The two retail buildings at 1685-1695 E. Cactus Ave. were fully leased ahead of their target August 2026 opening, with Maxie's and Aroma Café set to share the center with Meraki Greek Grill and Handel's Homemade Ice Cream, per the listing. The buildings were delivered in 2025 as part of the larger master-planned campus. The project also sits between two major regional hospitals, the 326-bed St. Rose Dominican Hospital – Siena Campus and the 150-bed West Henderson Hospital, positioning it within a corridor that has become a significant employment hub in Clark County.
EB-5 Financing Backs the Expansion
The Henderson location is being financed in part through $3.2 million in debt raised via the federal EB-5 immigrant investor program, spread across four investors contributing $800,000 each, according to Immco Investments LLC. USCIS has issued Form I-956F project approval for the expansion, confirming the venture meets federal EB-5 requirements before individual investor green card petitions can move forward. Immco previously handled EB-5 financing for Maxie's original Strip location as well.
The St. Rose Parkway corridor near the new restaurant carries about 68,100 vehicles a day and serves a 5-mile radius with an average household income of $136,440, per the LoopNet listing, with surrounding communities including Seven Hills, Anthem and Silverado Ranch. Henderson's population grew 11.5% since 2020 to reach 353,289 residents by July 2025, keeping its status as Nevada's second-largest city, according to U.S. Census Bureau estimates, with much of that growth concentrated on the city's southern and western edges.
Part of a Broader Henderson Dining Wave
Maxie's arrival adds to a string of Strip-adjacent restaurant brands staking claims in Henderson. Together with the Cactus Avenue project, the openings underscore how fast-growing West Henderson, with its affluent households and expanding medical and office base, is pulling proven resort-corridor dining concepts away from the Strip and into the suburbs.
