Sourdough & Co. is planning a Miami-area restaurant at Pinecrest Place, according to What Now Miami. The chain's own website also lists the Miami location as coming soon. Before it can serve its first sandwich, the location will need to pay licensing fees at application and pass a sanitation and safety inspection before opening. A plan review is required in some circumstances but not others, under rules from Florida's Division of Hotels and Restaurants.
A High-Traffic, High-Income Landing Spot
Pinecrest Place is a retail center. It sits along a stretch of US-1 that carries between 65,000 and 75,000 vehicles daily. The center's trade area has an average household income profile.
That combination of dense traffic and deep pockets makes the location a natural fit for a fast-casual concept built around premium ingredients. Sourdough & Co.'s sandwiches feature made-fresh-daily sourdough bread, alongside soups and salads. The brand has also leaned into sourdough's nutritional pitch, pointing to nutrient availability and antioxidants, a positioning detailed by FranchiseWire.
From a Sacramento Bread Bowl to National Franchise Push
Sourdough & Co. was founded in the Greater Sacramento area by Nick Singh; by March 2025, the company had operated for 15 years, according to FranchiseWire. Hoodline covered the brand's growth, including a South Land Park opening featuring sandwiches, soups, and bread bowls.
The chain has pursued a formal franchising model, with founder Nick Singh associated with the brand. FranchiseWire reported 82 locations in March 2025 and attributed to Singh a goal of reaching 700 locations by 2027.
That national growth got a boost in March 2025 when the chain partnered with franchise development firm Franchise FastLane, becoming the first fast-casual concept added to that firm's portfolio, according to FranchiseWire. FranchiseWire says the brand has many multi-unit owners, indicating it relies on operators with multiple locations to support its expansion.

Beyond South Florida, the chain is also planning locations near Costa Mesa, California. The planned Pinecrest restaurant is part of the chain's broader expansion. Sourdough & Co. plans to make its Miami debut later this year, though an exact opening date for the Pinecrest storefront has not been announced.
