The franchisees are Latrell Hayes, Kennon “Kip” Barber and Randy Barnes. They signed a multi-store development agreement in November 2025 covering three cafés to start in the St. Louis metro, franchising.com reported. Hayes and Barber are described as experienced multi-unit restaurant operators, and the group also has experience operating Jersey Mike's restaurants in the St. Louis area, according to STLtoday.com. Founded in Atlanta in 1993, Flying Biscuit Café has grown into a Southern-inspired breakfast and brunch brand. STLtoday.com reported that it has more than 30 locations across Georgia, North Carolina, Florida, Texas and Alabama. At the time of its announcement, franchising.com reported, the chain had 43 locations open and 11 in development across seven states.
