
After two decades cooking in South Florida kitchens, reality-TV veteran Robyn Almodóvar is finally opening a restaurant of her own. Against All Odds, known as AAO, is set to debut at 4204 NW 2nd Ave in Miami's Buena Vista neighborhood, with co-owner Austin Gaines targeting a November or December 2026 launch.
The winter opening target was confirmed to WhatNow Miami by Gaines, who co-owns the restaurant alongside Almodóvar. According to that report, AAO represents Almodóvar's first fully independent concept after two decades working in South Florida kitchens, including a stint as executive chef at Colorado's Stanley Hotel and a leadership role at Fort Lauderdale's Timbr. The Islands notes that Timbr, a multi-room venue on Las Olas Boulevard with European-countryside-inspired cuisine, opened in early 2025 and marked one of her most prominent executive kitchen posts before she set out on her own.
Almodóvar's résumé reads like a tour of competitive cooking television. She appeared on Hell's Kitchen, Chopped, Cutthroat Kitchen, and 24 in 24: Last Chef Standing, per the same WhatNow account. Her broadcast history runs deeper still: according to Food Network, she placed sixth on Hell's Kitchen Season 10 in 2012 and fifth on the Season 17 All-Stars edition in 2017, then went on to win Chopped and Cutthroat Kitchen in 2015 before competing on 24 in 24: Last Chef Standing in April 2026.
A Career Built From Food Trucks to Super-Yachts
She launched Palate Party in 2011, one of the region's first female-owned gourmet food trucks, which went on to win Miami New Times' “Best Food Truck in Miami” honor in 2013.
Her career has also stretched into corporate product development and high-end private service. Florida-based Future Foods Enterprises named her corporate chef for its PAOW! line of plant-based proteins in December 2020, where she led recipe development ahead of a 2022 retail launch, according to Green Queen Media. Southern Boating has also chronicled her work as a private yacht chef for luxury charters, noting that her signature offerings included elevated comfort dishes like caviar-topped homemade chicken nuggets — a detail that hints at the kind of playful-meets-refined cooking she may bring to her own dining room.
What's On the Menu at AAO
At AAO, the early menu points include beef wellington and grilled octopus with smoked bravas sauce, dishes that fit what WhatNow Miami describes as a contemporary American approach shaped by South Florida's food culture. Per the outlet, that style traces back to a blend of American, French, and Mediterranean influences.
The physical space is being designed to feel lived-in rather than formal, with string lights planned for an evening courtyard setting intended to encourage lingering rather than rapid table turnover, the WhatNow report states. “Created with love and passion,” is how Gaines described the concept, adding that AAO aims to provide “a comfortable, relaxed atmosphere, exceptional service and an incredible meal.”
Why the Name, and Why Buena Vista
The restaurant's name carries personal weight. Almodóvar selected Against All Odds to symbolize her journey through two decades in a male-dominated industry before launching her first fully independent restaurant, according to Nation's Restaurant News, which noted she has repeatedly spoken about her pride in representing female and LGBT culinary leaders.
AAO's address places it at 4204 NW 2nd Ave in Buena Vista, a neighborhood evolving into a magnet for boutique, chef-driven concepts just minutes from the Miami Design District.
The corridor has been gaining momentum as an alternative to corporate mega-developments. Hoodline reported that the stretch recently welcomed Storia old-world osteria charm, an Italian spot at 5018 NE 2nd Ave that opened in August 2026.
