A new Peruvian restaurant called Ayni is planning to open this fall inside The Collective, the dining and retail center at 3900 Paradise Rd that has quietly turned into one of the valley's most interesting off-Strip food destinations. The concept will take Suite N, and a Clark County permit has flagged the planned opening. WhatNow identifies “Gonealo Quispe” as the owner.
A Suite With Deep Restaurant Roots
As first reported by WhatNow, Ayni will open in the Paradise neighborhood of Las Vegas within The Collective, a roughly 58,000 to 65,000-square-foot retail and dining center that was originally built in 1986 and renovated in 2022, according to JLL. The center was previously known as Citibank Park before its modern remodel, per the same listing. The exact suite Ayni is moving into previously housed Satay.
Ayni is a Peruvian concept.
What's in a Name
Ayni is not a random word. In Quechua and Andean cultural heritage, it represents the foundational moral principle of balanced reciprocity and mutual aid, often summarized in Andean communities as today for you, tomorrow for me, according to Global Volunteers. The same source describes faena as communal work, including construction projects. The restaurant's own website leans into that heritage directly, stating that “every corner of Ayni honors the Andean roots with a contemporary interpretation: color, geometry, and symbols that accompany the table without shouting for attention.”
The site also describes the sourcing philosophy behind the kitchen, saying “every ingredient that reaches our table comes from a seed that trusted the sun.” The restaurant's website also describes an Andean-inspired design featuring color, geometry and symbols.
Joining an Already Crowded Off-Strip Dining Scene
Ayni won't be the only draw at The Collective. The center already includes Cleaver Steakhouse, Tacos & Beer, and Marrakech Mediterranean Restaurant, and it's anchored by Ainsley at The Collective, a 388-unit luxury apartment community developed by The Calida Group that opened for leasing in November 2024, according to EIN Presswire. That built-in residential density sits right next to a growing restaurant row.
Just this past February, Hoodline covered the arrival of Braseria by EDO, which converted a 5,000-square-foot upper-level suite at the same center into a vaulted French-Spanish brasserie overlooking the Sphere. Commercial real estate filings also point to more growth ahead, with a newly approved 132-unit apartment project next door slated to include a planned Vegas Loop underground station from The Boring Company, according to Cityfeet.
Riding a Global Peruvian Wave
Ayni's arrival also lines up with a bigger moment for Peruvian cuisine worldwide. PromPerú announced in July that Lima will host the World's 50 Best Restaurants global awards ceremony in November 2026, following Lima restaurant Maido's No. 1 global ranking in 2025 — meaning two different Lima restaurants have claimed the world's top spot since 2023.
Ayni's fall debut will join Las Vegas's broader off-Strip dining scene. What remains unclear for now is the restaurant's exact opening date this fall, its full food and cocktail menu, and whether Quispe plans to bring in direct Andean sourcing for the kitchen.
