Utah's first Salt & Straw scoop shop is opening this week, and it's not where everyone expected. The Portland-based ice cream chain is debuting Friday at Mountain View Village in Riverton, at 4489 W. Partridge Hill Lane, Suite S-120, next door to R&R Barbecue, rather than at the Trolley Square location in Salt Lake City that was previously announced as part of the brand's Utah plans.
According to The Salt Lake Tribune, the Riverton shop will be Salt & Straw's first in the state, a shift from earlier reporting that had pegged the Salt Lake City mall spot as the brand's Utah debut. Back in April, Axios reported that Salt & Straw was bringing Utah's first location to Trolley Square, and a June Tribune piece described two planned Utah shops, one at Mountain View Village and another inside Trolley Square. The new reporting confirms only that Riverton will open first; it does not say what has become of the Trolley Square plans.
Salt & Straw’s Portland beginnings were small: co-founders Kim Malek and her cousin Tyler started with an ice cream cart, after Tyler experimented with used ice cream makers and the pair sought ideas from local chefs, chocolatiers, brewers and farmers. The company says it continues that neighborhood-focused approach in new cities, working with local makers, farmers and chefs on its evolving menu. The company’s account of its founding and local collaborations helps explain why a Utah-specific flavor is part of the launch.
A Flavor Built Around Utah's Dirty Soda Habit
Salt & Straw is marking the occasion with a flavor made specifically for the local market. The shop will debut Frosted Pink Sugar Cookie Dough, a flavor the brand says is inspired by Utah's dirty soda culture, according to the same report. The scoop is built from sweet cream ice cream loaded with vanilla sugar cookie crumbles, chewy sugar cookie dough and ribbons of pink frosting.
Utah’s dirty-soda craze took off around 2010, with an early signature drink combining Diet Coke, coconut syrup, fresh lime and a touch of half-and-half. St. George’s Swig was among the state’s early soda shops, and the format has since spread well beyond Utah through social media and growing shop chains. Utah’s tourism office traces the drink’s local roots to the same period that Swig opened in St. George.
Riverton customers will also find Salt & Straw's regular menu alongside a recently launched seasonal offering called The Great Candycopia, described as a trick-or-treat-level bounty of chocolate candies dumped into salted butterscotch ice cream. The chain has built a national reputation on unusual pairings, including its Chocolate Malted Potato Chip Cupcake flavor, and currently operates locations in states including California, Florida and Texas.
The Riverton shop is joining a large retail-and-entertainment hub rather than a stand-alone storefront. CenterCal describes Mountain View Village as an 85-acre mixed-use development, with tenants that include Cinemark, Nike, Sephora and North Italia. Its scale and mix of shopping, dining and entertainment give the new scoop shop a setting designed to draw visitors from across the south valley, not just nearby neighborhoods. CenterCal’s property overview lists the development’s size and major tenants.
Opening Weekend Perks for Early Arrivals
Salt & Straw is leaning into the launch with a weekend's worth of promotions. On Friday, the first 100 people in line will receive gift cards of varying values, with the grand prize being free ice cream for an entire year. The shop is also rolling out a red carpet on Friday for families to use as a photo opportunity.
Saturday brings more family-focused perks: kids get a free scoop with every purchase, and the shop will host face-painting on-site from 11 a.m. to 1 p.m. The pattern echoes how Salt & Straw has handled other recent openings — when the chain opened its Boston Seaport shop in July, the first 100 customers there similarly received gift cards ranging from a free scoop up to free ice cream for a year, alongside free kids' scoops and face-painting the following day.
