A working mill and residency program

Upstairs, Altbau is built out as a kind of bread lab, with a grain-milling room and classroom meant to host visiting bakers for short residencies and workshops. Robertson described the setup in an interview with King Arthur Baking, explaining that the in-house milling capacity is designed to let the team work with fresh-milled local flours while offering hands-on classes for both professionals and serious home bakers. He has stressed that Altbau is a stand-alone project, not a stealth Tartine expansion.

Ovens, flour and what you'll eat

The bakery is kitted out with a Bongard four-deck oven and a 40-inch New American stone mill, plus two climate-controlled rooms, one dedicated to pastry and one to bread, Grub Street reports. Robertson plans to mill part of the flour on-site and back it up with regional grains and shipments from Cairnspring Mills. He has also said he is particularly excited about working Pennsylvania maple syrup into the pastry program. Staff will aim to pull fresh loaves around 11 a.m. and again near 4 p.m., with early menu plans calling for jambon-beurre sandwiches, medialunas and seasonal tartines.

Altbau brings a marquee baking name to a stretch of North 8th that has been filling in fast this summer, in what local outlet Greenpointers says is turning into a full-on dining corridor. Public records show that the building at 184 North 8th sold in April for about $3.1 million, according to PropertyShark, a price tag that hints at the scale of the investment backing the project. Neighbors can expect a roomy, design-forward café rather than a grab-and-go counter squeezed into a narrow storefront.
