Six months after Callahan's Family Restaurant served its final meal on Cassopolis Street, the beloved Elkhart diner is back in business — this time under new ownership and at a new address, but with the same worn booths and familiar faces that made it a neighborhood fixture for four decades. Miranda Lambrou, the daughter of the restaurant's founders, has taken over the family brand and reopened it at Starlight Square on State Road 19, a bit more than a mile north of the original spot.
The reopening drew an immediate crowd, with the Elkhart community showing up to eat at the new location, according to WSBT. Lambrou said she plans to maintain her parents' legacy, and she hopes the restaurant eventually passes down to her own children, keeping it in the family for another generation. Longtime customer Terry Longacre said the reopening would have a big impact on the community that had rallied around the restaurant since its closure.
Among those who showed up was Peggy, a former Callahan's employee who spent her 75th birthday at the restaurant on opening day. The station's report notes she said she was asked to watch customers and talk to people — a nod to the restaurant's long-standing reputation for knowing patrons by name and fostering a family-oriented atmosphere that regulars had grown attached to over the years.
From Cassopolis Street to Starlight Square
The original Callahan's operated at 2917 Cassopolis Street in Elkhart for 42 years before closing its doors on March 1, 2026, according to ABC57. The closure was driven by the retirement of original owner Sam Lambrou after more than four decades running the business, which required selling the commercial real estate, per the same account. Commercial real estate firm TCII Capital Group acquired the Cassopolis Street site in February 2026 and is redeveloping the building for a Metro Diner location, per the company's own project page.
Rather than let the family name disappear, Miranda Lambrou leased a smaller retail bay at 51543 Indiana State Road 19 in the Starlight Square shopping plaza, a space that had previously housed Bruno's Pizza. The new location is not as large as the old one — described as neither large nor small, accommodating roughly 80 to 100 diners — but it still includes the same old booths from the previous restaurant, giving longtime customers a sense of continuity even in the smaller footprint.
New Hours, Same Recipe for Community
Under Lambrou's ownership, Callahan's now operates from 6 a.m. to 3 p.m. daily, narrowing its focus to breakfast and lunch service after previously serving breakfast, lunch, and dinner at the old location. The restaurant built its reputation on a blend of traditional American comfort food and Greek-inspired dishes, including specialties like Saganaki and Spartan Omelettes, a culinary mix that drew a loyal regional following over the years.
The City of Elkhart welcomed the restaurant's return under family leadership, citing the importance of local family legacy businesses to the community. City officials had previously noted widespread sadness when the original closure was announced earlier in the year, making the reopening feel like a homecoming for many longtime patrons.
Part of what made the original restaurant unusual in an industry known for high turnover was its staff retention: about 10 employees had worked there for 20 years or more before the closure, including manager Karla Alvarez, who spent nearly 30 years on the job. Staff described the workplace as an extended family, a culture Lambrou now hopes to carry forward under new ownership at Starlight Square, even as the surrounding stretch of Cassopolis Street continues to shift with national chains moving in behind them.
