A new Parlor Pizza Bar is taking shape on Elmhurst's Spring Road, bringing the Chicago-born pizza chain to the suburbs. The location at 447 Spring Road sits south of downtown Elmhurst, and it's currently under construction with no opening date announced yet.
Patch reported that Parlor Pizza Bar would take over the site of the former Silverado Grill, according to Patch. The address had already been circulating on city commercial project review lists as early as 2025, ahead of the reported deal. As WhatNow Chicago reports, this will be Parlor Pizza Bar's fourth location overall, joining its existing spots in West Loop, Wicker Park, and River North.
A Bigger Building Replaces a 40-Year Local Fixture
The new building at 447 Spring Road spans roughly 7,000 square feet, nearly double the footprint of the original 4,000-square-foot Silverado Grill structure that stood there before it was demolished in late 2023, per Patch's reporting. Silverado Grill itself was a restaurant that had operated on Spring Road since the 1980s before closing permanently in fall 2022 after about 40 years in business, according to the same Patch account. WhatNow Chicago also mentions Silverado Grill. Site work was already occurring by December when the commercial-project list was discussed, the outlet's reporting indicates.
Behind the redevelopment is Silverado Spring LLC, which Patch identified as the property's taxpayer. Other Elmhurst restaurants along the same corridor include Doc's Victory Pub, Golden Boy Barbecue, and Victory Meat & Seafood, per Patch's local reporting. The site is now slated to house Parlor Pizza Bar.
Elmhurst's Spring Road Corridor Keeps Growing
Elmhurst's Spring Road business district is a business district, according to Patch. The project will add another restaurant to the corridor. Other Chicago restaurant concepts include Rino Bar, Texas Taco Bar, and Dessert Dealer.
For Elmhurst diners, the menu will likely echo what's served at Parlor's city locations: wood-fired, thin-crust Neapolitan-style pizzas cooked in imported Italian Pavesi ovens, a signature setup the chain has used since its founding, according to DNAinfo. WhatNow Chicago's reporting lists the Margherita and describes the menu as including appetizers, sandwiches, and salads. Parlor Hospitality Group was unavailable for comment when contacted by WhatNow Chicago.
From West Loop Flagship to Fourth Location
Parlor Hospitality Group opened its flagship Parlor Pizza Bar on Green Street in Chicago's West Loop in September 2014, later expanding to Wicker Park in 2016 and River North in January 2019, according to DNAinfo. Owners Michael Bisbee and Tim Hendricks were associated with the concept, which centered on wood-fired pizzas, the outlet reported at the time. Hoodline covered that River North debut back in a 2019 opening report, and the chain has since expanded to Elmhurst.
A Regulatory History Worth Noting
The Elmhurst expansion comes years after a rocky stretch for the company in Chicago. In October 2021, state revenue agents and Chicago police raided all three Chicago Parlor Pizza Bar locations as part of an investigation by the Illinois Department of Revenue's Bureau of Criminal Investigations into potential state tax violations, according to Fox 32 Chicago. All three locations were temporarily shuttered while search warrants were executed, the station reported. Following those raids, the City of Chicago's Department of Business Affairs and Consumer Protection opened its own investigation into allegations of unpaid overtime and municipal labor standard violations at the company, according to a City of Chicago joint agency statement that called on former employees to submit wage claims.
For now, Elmhurst residents are left watching construction progress on Spring Road, with no confirmed opening date, while business and liquor licenses are being filed. The project would bring Parlor Pizza Bar to Elmhurst, according to Hey Elmhurst!, which reported that the brand had previously operated in Chicago.
